Mini Doughnut Cupcakes...yep you read that right. I won't tell you how many we've already popped into our mouth! These would be a very sweet little tea party treat for your daughter and they would make an even better treat to have over coffee with you and your bestie! Enjoy...and there is NO doubt that you will!
- 1c sugar
- 1-1/2 teaspoon cinnamon
- 1 pkg white cake mix, plus ingredients to prepare mix (or make your own white cake recipe)
- 1 tablespoon ground nutmeg
Preheat oven to 350. Grease and flour mine muffin cups (1-1/4in). Combine sugar and cinnamon in small bowl and set aside.
Prepare cake mix according to directions; stir in nutmeg. Spoon batter into prepared muffin cups, filling two-thirds full.
Bake about 12 minutes, until browned and toothpick inserted into center comes out clean.
Remove cupcakes (they should fall right our of pan, if you greased and floured muffin tin). Roll warm cupcakes in sugar and cinnamon mixture until completely coated.
Best if served the day they're made, but I stuck them all in a large Ziplock, sealed it around a straw, then sucked the air out of it to seal it up. The cupcakes have stayed moist and perfect all day!
